Ingredients
12 oz rotini pasta (or similar short pasta)
1 lb cooked shrimp, peeled and deveined
1 cup cherry or grape tomatoes, halved
1/4 cup red onion, finely diced (optional)
1/4 cup fresh parsley, chopped
1/2 cup shredded parmesan cheese
1/4 cup olive oil
Juice of 1 lemon
1 clove garlic, minced
Salt and black pepper to taste
Crushed red pepper flakes (optional)
Lemon wedges for garnish
Instructions
- Bring a large pot of salted water to a boil. Cook the pasta according to package directions until al dente. Drain and rinse with cold water to cool.
