Ingredients

4 cups diced Yukon Gold potatoes

1 ½ cups chopped cooked ham

1 cup chopped onion

1 cup chopped carrots

¾ cup chopped celery

4 cups chicken broth

2 cups milk or heavy cream

4 tablespoons butter

¼ cup all-purpose flour

1 teaspoon salt

½ teaspoon black pepper

2 tablespoons chopped fresh parsley


Instructions

1. In a large pot, melt butter over medium heat. Add onions, carrots, and celery. Cook for 5-7 minutes until tender.

2. Stir in flour and cook for 1-2 minutes to make a roux.

3. Slowly whisk in the chicken broth until the mixture is smooth and slightly thickened.

4. Add the potatoes and bring the mixture to a boil. Reduce heat and simmer for 15-20 minutes or until potatoes are fork-tender.

5. Stir in the ham and milk (or cream). Simmer for another 5-10 minutes to heat through.

6. Season with salt, pepper, and fresh parsley.
