4 cups chicken broth
2 cups milk or heavy cream
4 tablespoons butter
¼ cup all-purpose flour
1 teaspoon salt
½ teaspoon black pepper
2 tablespoons chopped fresh parsley
Instructions
1. In a large pot, melt butter over medium heat. Add onions, carrots, and celery. Cook for 5-7 minutes until tender.
2. Stir in flour and cook for 1-2 minutes to make a roux.
3. Slowly whisk in the chicken broth until the mixture is smooth and slightly thickened.
4. Add the potatoes and bring the mixture to a boil. Reduce heat and simmer for 15-20 minutes or until potatoes are fork-tender.

7. Serve hot with your favorite sides or bread.
Notes
Use leftover holiday ham for extra flavor and convenience.
Add a handful of shredded cheddar at the end if you like a cheesy twist.
