Description

Tender cheese tortellini, juicy cherry tomatoes, briny olives, mozzarella pearls, and savory salami come together in a zesty Italian dressing for a quick lunch, easy dinner, healthy snack-style meal prep, or crowd-pleasing side dish. It is packed with classic deli flavors, perfect for potlucks, summer gatherings, lunch ideas, dinner ideas, and simple food ideas when I want something bold without much fuss.


Ingredients

12 ounces cheese tortellini

1 cup salami, diced

1 cup mozzarella pearls

1 cup cherry tomatoes, halved

1/2 cup black olives

1/2 cup green olives

1/2 cup roasted red peppers, chopped

1/4 cup red onion, thinly sliced

1/4 cup fresh basil, chopped

2 tablespoons fresh parsley, chopped

3/4 cup Italian dressing

1 tablespoon olive oil

1 tablespoon red wine vinegar

1 teaspoon Italian seasoning

1/4 teaspoon crushed red pepper flakes

1/2 teaspoon salt

1/4 teaspoon black pepper


Instructions

1. Bring a pot of salted water to a boil and cook the cheese tortellini according to the package directions until just tender.

2. Drain the tortellini and rinse briefly under cool water to stop the cooking. Let it drain well.

3. In a small bowl or jar, whisk together the Italian dressing, olive oil, red wine vinegar, Italian seasoning, crushed red pepper flakes, salt, and black pepper.

4. In a large mixing bowl, add the cooled tortellini, diced salami, mozzarella pearls, cherry tomatoes, black olives, green olives, roasted red peppers, red onion, basil, and parsley.

5. Pour the dressing over the salad and toss gently until everything is evenly coated.

6. Cover and refrigerate for at least 30 minutes so the flavors can blend.

7. Toss again before serving and add an extra splash of dressing if needed.

Notes

Use refrigerated tortellini and cook it just to al dente so it stays firm after chilling.

For the best flavor, make the salad a little ahead of time and stir in a splash of extra dressing right before serving.
