Ingredients
113 g melted butter
1 ½ cups graham cracker crumbs
680 g cream cheese
1 cup granulated sugar
3 large eggs
1 cup sour cream
1 teaspoon vanilla extract
2 cups thinly sliced apples (Granny Smith or Honeycrisp)
1 teaspoon cinnamon (for apples)
½ cup all-purpose flour
½ cup old-fashioned oats
½ cup brown sugar
½ teaspoon cinnamon (for topping)
¼ teaspoon nutmeg
60 g melted butter (for topping)
Caramel sauce for drizzling (optional)
Instructions
1. Preheat oven to 325°F and wrap the outside of a springform pan with foil for a water bath.
2. Mix graham cracker crumbs with melted butter and press into the bottom of the pan. Bake 8–10 minutes. Cool.
3. In a bowl, beat cream cheese until smooth. Add sugar, then eggs one at a time, followed by sour cream and vanilla.
4. Pour cheesecake batter over cooled crust and smooth the top.
5. Toss apples with cinnamon and layer evenly over the cheesecake filling.
6. Mix flour, oats, brown sugar, cinnamon, nutmeg, and melted butter until crumbly. Sprinkle over apples.
7. Bake in a water bath for 60–70 minutes until the center is set but slightly jiggly.
8. Let cool completely, then chill at least 4 hours or overnight.
9. Before serving, drizzle with caramel sauce if using. Slice and enjoy!

Use room temperature cream cheese to prevent lumps in the filling.
