Ingredients
5 large yellow onions, thinly sliced
4 tablespoons unsalted butter
1 cup dry white wine
6 cups beef broth
1 teaspoon fresh thyme or 1/2 teaspoon dried thyme
1 bay leaf
1 teaspoon salt
1/2 teaspoon black pepper
1 baguette, sliced
2 cups grated Gruyère cheese
Instructions
1. In a large heavy-bottomed pot, melt the butter over medium-low heat. Add sliced onions and cook slowly, stirring often, for 40–50 minutes until deeply caramelized.
2. Deglaze with white wine, scraping the bottom of the pan to release browned bits. Simmer for 5 minutes.
3. Add beef broth, thyme, bay leaf, salt, and pepper. Simmer uncovered for 30 minutes.
4. Preheat broiler. Toast baguette slices until crisp.
5. Ladle soup into oven-safe bowls. Top each with a baguette slice and generous amount of Gruyère.
6. Broil until cheese is bubbly and golden, about 3–5 minutes. Serve hot.
Notes
Use a mix of yellow and sweet onions for added complexity.
For vegetarian option, swap beef broth with a rich mushroom or vegetable broth.
