Ingredients
1 lb chicken tenders
1 cup all-purpose flour
1/2 cup cornstarch
2 large eggs
1 tsp salt
1/2 tsp black pepper
2 cups vegetable oil (for frying)
1/2 cup mayonnaise
1/4 cup sweet chili sauce
1 tbsp sriracha sauce
Instructions
1. Cut the chicken into strips if using breasts and pat dry. Season with salt and pepper.
2. Set up three bowls: one with flour, one with beaten eggs, one with flour and cornstarch mix.
3. Dredge chicken in flour, then eggs, then cornstarch mixture.
4. Heat oil in a deep pan to 350°F (175°C). Fry chicken in batches for 4–5 minutes until golden and cooked. Drain on paper towels.
5. In a bowl, whisk together mayonnaise, sweet chili sauce, and sriracha.
