Description

It’s a one-skillet dinner packed with juicy chicken, fluffy scrambled eggs, crisp-tender veggies, and day-old rice, all drenched in a creamy, spicy-sweet bang bang sauce. Ingredients

1 pound chicken breast, diced

3 cups cooked day-old rice

1 cup diced carrots

1/2 cup peas

3 cloves garlic, minced

3 large eggs

2 tablespoons soy sauce

2 tablespoons sriracha or chili garlic sauce

1/3 cup mayonnaise

1 tablespoon honey

3 green onions, chopped

2 tablespoons cooking oil

Salt and pepper to taste


Instructions

1. Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add chicken, season with salt and pepper, and cook until golden and fully cooked. Set aside.

2. In the same skillet, scramble the eggs until just cooked. Set aside with the chicken.

3. Add another drizzle of oil and sautée garlic, carrots, and peas until tender, about 3–4 minutes.

4. Add the rice to the skillet and break it apart. Let it fry undisturbed for a couple of minutes to crisp slightly.

5. Add back the chicken and eggs. Mix well.

6. In a bowl, whisk together mayonnaise, sriracha, soy sauce, and honey. Pour over the rice mixture and toss to coat evenly.

7. Garnish with green onions and serve hot.

Notes

Day-old rice is best for texture; fresh rice can become too soft.

Feel free to sub the chicken with shrimp or tofu for a different protein option.
