Ingredients for the Beef Dorito Casserole

  • Ground beef: The heart of the casserole, delivering protein and flavor.
  • Onion and garlic: Essential aromatics that deepen the savory base.
  • Taco seasoning: Adds that signature Tex-Mex taste.
  • Rotel tomatoes: Brings a bit of heat and tomato tang to the meat mixture.
  • Cream of chicken soup: Adds creaminess and holds everything together.
  • Sour cream: Smooths out the filling with a mild tang.
  • Cheddar cheese: Melts beautifully for that golden, bubbly top.
  • Doritos: The crunchy, cheesy layer that sets this casserole apart.
  • Fresh toppings (optional): Think chopped tomatoes, cilantro, or green onions.

How To Make the Beef Dorito Casserole

Step 1: Sauté the Beef Mixture

In a large skillet over medium heat, cook ground beef with chopped onions until browned. Add minced garlic and stir until fragrant.

Step 2: Add the Flavor

Stir in taco seasoning and Rotel tomatoes. Let it simmer for a few minutes, allowing flavors to meld.

Step 3: Make It Creamy

Lower the heat and stir in cream of chicken soup and sour cream. Mix until creamy and well-combined.

Step 4: Layer It Up

Preheat your oven to 350°F. In a greased 9×13 baking dish, create layers starting with a layer of crushed Doritos, followed by the beef mixture, then a generous sprinkle of cheddar cheese. Repeat the layers and top with more cheese.

Step 5: Bake and Serve

Bake uncovered for 20-25 minutes or until the cheese is bubbly and golden. Top with your favorite fresh garnishes and serve hot.

Serving and Storing Beef Dorito Casserole

This casserole is best enjoyed hot and fresh, but leftovers keep beautifully. Store in an airtight container in the fridge for up to 3 days. Reheat in the oven or microwave until warmed through—just note that the Doritos will soften slightly.

For freezing, prepare the casserole up to the baking step, wrap tightly, and freeze for up to 2 months. Thaw overnight in the fridge before baking.
