Ingredients
1 tablespoon olive oil
1 pound ground beef (preferably ground chuck)
1 small onion, chopped
3 cloves garlic, minced
2 tablespoons tomato paste
1 can (28 ounces) crushed tomatoes
1/2 cup red wine
1 teaspoon Italian seasoning
1 teaspoon sugar
1 teaspoon salt (or to taste)
1/2 teaspoon black pepper (or to taste)
2 tablespoons fresh parsley, chopped
12 ounces rigatoni pasta
1/2 cup reserved pasta water (if needed)
Parmesan cheese, for serving
Instructions
1. Heat olive oil in a large skillet over medium heat. Add chopped onions and sauté for 4 minutes until translucent.
2. Stir in minced garlic and cook for another 30 seconds.
3. Add ground beef and cook until browned, breaking it apart with a spoon. Season with salt and pepper.
4. Mix in tomato paste, crushed tomatoes, and red wine. Stir well and bring to a simmer.
5. Add Italian seasoning and sugar. Adjust seasoning to taste.
6. Reduce heat and simmer sauce for 25–30 minutes, stirring occasionally.
7. While the sauce simmers, cook rigatoni in salted boiling water until al dente. Drain and reserve 1/2 cup pasta water.
8. Combine pasta with the sauce in the skillet. Toss well to coat. Add a splash of pasta water if needed.
9. Stir in fresh parsley and serve hot with grated Parmesan on top.
