Ingredients

2 pounds beef chuck roast, cut into cubes

1 tablespoon olive oil

1 medium onion, chopped

3 cloves garlic, minced

2 stalks celery, chopped

2 tablespoons tomato paste

3 tablespoons all-purpose flour

4 cups beef broth

1 tablespoon Worcestershire sauce

4 carrots, peeled and sliced

1.5 pounds baby potatoes

1 teaspoon salt

1/2 teaspoon black pepper

3 sprigs fresh thyme

1 bay leaf

4 crusty bread boules

2 tablespoons chopped parsley (for garnish)


Instructions

1. Cut beef into bite-sized cubes and season with salt and pepper.

2. Heat olive oil in a large pot over medium-high heat. Sear the beef in batches until browned. Remove and set aside.

3. Add onion, garlic, and celery to the same pot. Sauté until soft and fragrant.

4. Stir in tomato paste and cook for 2 minutes. Sprinkle flour over and stir to coat.

5. Pour in beef broth and Worcestershire sauce, scraping up any browned bits.

6. Return beef to the pot. Add carrots, potatoes, thyme, and bay leaf.

7. Bring to a boil, then lower to a simmer. Cover and cook for 1.5 to 2 hours, until beef is tender.

8. Preheat oven to 350°F. Hollow out bread boules and toast for 10 minutes.

9. Remove thyme sprigs and bay leaf. Ladle stew into bread bowls.

10. Garnish with parsley and serve immediately.

Notes

Toasting the bread bowl helps prevent it from getting soggy too quickly.
