Ingredients

12 ounces penne pasta

1 tablespoon olive oil

1 small yellow onion, diced

3 cloves garlic, minced

1 pound ground beef

1 teaspoon Italian seasoning

1 teaspoon paprika

1 teaspoon salt

1/2 teaspoon black pepper

1 cup beef broth

1 cup heavy cream

4 ounces cream cheese, softened

2 cups shredded cheddar cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

2 tablespoons chopped fresh parsley


Instructions

1. Bring a large pot of salted water to a boil and cook the penne until al dente. Drain and set aside.

2. Heat the olive oil in a large skillet over medium heat. Add the diced onion and cook for 3 to 4 minutes until softened.

3. Stir in the minced garlic and cook for 30 seconds until fragrant.

4. Add the ground beef and cook until browned, breaking it apart as it cooks. Drain any excess grease.

5. Season the beef mixture with Italian seasoning, paprika, salt, and black pepper.

6. Pour in the beef broth and heavy cream, then add the cream cheese. Stir until the cream cheese is fully melted and the sauce is smooth.

7. Add the cheddar cheese, mozzarella cheese, and Parmesan cheese a little at a time, stirring until melted and creamy.

8. Add the cooked penne to the skillet and toss until the pasta is fully coated in the cheesy sauce.

9. Let everything simmer for 2 to 3 minutes so the sauce thickens slightly and clings to the pasta.

10. Sprinkle with fresh parsley and serve hot.

Notes

I like to cook the pasta just shy of fully done so it stays tender and does not turn too soft once it finishes in the sauce.

When reheating leftovers, I add a splash of milk or beef broth to bring the sauce back to a creamy texture.
