Ingredients
2 pounds boneless skinless chicken thighs
2 tablespoons adobo sauce from chipotle peppers
3 cloves garlic
1 small red onion
2 tablespoons olive oil
1 teaspoon dried oregano
1 teaspoon ground cumin
1 teaspoon salt
½ teaspoon black pepper
2 tablespoons apple cider vinegar (or red wine vinegar)
Instructions
1. Combine chipotle adobo, garlic, onion, olive oil, oregano, cumin, vinegar, salt, and pepper in a blender or food processor and blend until smooth.
2. Pour marinade over chicken thighs in a bowl or zip-top bag. Seal and refrigerate for at least 2 hours or overnight.
3. Preheat grill or skillet over medium-high heat. Cook chicken for 5–6 minutes per side until charred and fully cooked.
4. Remove chicken and let rest for 5 minutes.
5. Chop into bite-sized pieces and serve as desired.
Notes
For bolder flavor, marinate the chicken overnight.
If using chicken breasts, reduce cook time to avoid dryness.
