3 cups cooked shredded chicken

8 ounces cream cheese, softened and cubed

1 cup shredded cheddar cheese

1 cup milk or half-and-half

1/2 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons chopped fresh parsley


Instructions

1. Melt the butter in a large pot or Dutch oven over medium heat.

2. Add the onion, carrots, and celery, then cook for 5 to 6 minutes until softened.

3. Stir in the garlic and cook for 30 seconds.

4. Pour in the chicken broth and whisk in the ranch seasoning mix.

5. Add the uncooked rice and bring the soup to a gentle simmer.
