454g fresh cremini mushrooms
1 medium yellow onion, diced
3 cloves garlic, minced
1 tablespoon fresh thyme leaves
1 teaspoon chopped rosemary
3 tablespoons unsalted butter
2 tablespoons olive oil
3 tablespoons all-purpose flour
4 cups vegetable or chicken stock
1 cup heavy cream
1 teaspoon salt
1/2 teaspoon ground black pepper
Instructions
1. Heat olive oil and butter in a large pot over medium-high heat. Add sliced mushrooms and sautée until golden brown and moisture has evaporated. Reserve a few slices for garnish.
