Ingredients

454g fresh cremini mushrooms

1 medium yellow onion, diced

3 cloves garlic, minced

1 tablespoon fresh thyme leaves

1 teaspoon chopped rosemary

3 tablespoons unsalted butter

2 tablespoons olive oil

3 tablespoons all-purpose flour

4 cups vegetable or chicken stock

1 cup heavy cream

1 teaspoon salt

1/2 teaspoon ground black pepper


Instructions

1. Heat olive oil and butter in a large pot over medium-high heat. Add sliced mushrooms and sautée until golden brown and moisture has evaporated. Reserve a few slices for garnish.

2. Add diced onions and cook until soft and translucent. Stir in garlic, thyme, and rosemary and cook for 1-2 minutes.

3. Sprinkle flour over the mushroom mixture and stir to coat evenly. Cook for 1-2 minutes to eliminate raw flour taste.

4. Slowly pour in the stock while stirring to prevent lumps. Bring to a simmer and cook for 10-15 minutes.

5. Reduce heat to low, stir in the heavy cream, and simmer for another 5 minutes. Adjust salt and pepper.

6. For a smoother texture, use an immersion blender to blend part of the soup, leaving some chunks if desired.

7. Serve hot, garnished with reserved mushrooms and fresh herbs.

Notes

For a deeper flavor, add a splash of dry white wine after sautéeing the mushrooms.
