Ingredients

2 pounds ground beef (85% lean)

1 cup canned black beans, drained and rinsed

1/2 cup diced red bell pepper

1/2 cup diced yellow bell pepper

1/2 cup diced onion

1 (10 oz) can diced tomatoes with green chiles, drained

1 packet taco seasoning mix

1 cup shredded cheddar cheese (plus extra for topping)

1/2 cup crushed tortilla chips or breadcrumbs

2 large eggs

1/4 cup chopped fresh cilantro (plus more for garnish)

Salt and pepper to taste

Diced fresh tomatoes for garnish (optional)


Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a loaf pan or line it with parchment paper.
  2. In a large bowl, mix ground beef, black beans, bell peppers, onion, tomatoes with green chiles, taco seasoning, crushed chips or breadcrumbs, cheddar cheese, eggs, cilantro, salt, and pepper until just combined.
  3. Transfer the mixture into the loaf pan and shape it evenly.
  4. Bake uncovered for 45–50 minutes or until the internal temperature reaches 160°F (71°C).
  5. Remove from oven, sprinkle extra cheddar on top, and return to oven for 5–10 minutes until cheese is melted.
  6. Let the meatloaf rest for 10 minutes. Garnish with fresh tomatoes and cilantro before slicing.
