2 teaspoons sweet pickle relish
1 teaspoon white vinegar
1/4 teaspoon garlic powder
1/4 teaspoon paprika
1 pound ground beef (80/20)
8 flour tortillas (street taco size)
1 cup shredded cheddar cheese
1/2 cup dill pickle slices
1 cup shredded lettuce
Salt and black pepper to taste
Instructions
1. In a small bowl, whisk together mayo, ketchup, mustard, relish, vinegar, garlic powder, and paprika to create the Big Mac sauce. Set aside or chill.
2. Form the ground beef into 8 equal balls, about 2 ounces each.
3. Heat a large cast iron skillet over medium-high heat.
4. Place a tortilla onto the skillet and place a beef ball in the center.
5. Smash the beef flat with a burger press or spatula to cover most of the tortilla.
6. Season the beef with salt and pepper. Cook for 2–3 minutes until the beef is browned.
7. Flip the tortilla and beef patty. Top with shredded cheese.
8. Cook another 1–2 minutes until cheese melts and tortilla is crisp.
9. Remove from skillet and top with lettuce, pickles, and Big Mac sauce.
10. Fold and serve immediately.
Notes
For extra crispy tortillas, press lightly with a spatula while cooking.
The Big Mac sauce can be made ahead and kept in the fridge for up to 1 week.
