Ingredients

6 bone-in, skin-on chicken thighs or drumsticks

Salt and black pepper, to taste

1 tbsp olive oil

1 cup barbecue sauce

1/2 cup bourbon

1 1/2 cups fresh or canned peach chunks

2 tbsp brown sugar

1 tbsp apple cider vinegar

1 tsp garlic powder

1/2 tsp smoked paprika

Fresh chopped parsley (optional, for garnish)


Instructions

  1. Pat chicken dry and season with salt and pepper. Preheat grill to medium-high or oven to 400°F (200°C).
  2. Heat olive oil in a skillet. Sear chicken skin-side down until browned, about 4–5 minutes per side. Set aside.
  3. In the same pan, add bourbon and simmer 2 minutes. Stir in BBQ sauce, peach chunks, brown sugar, vinegar, garlic powder, and paprika.
  4. Let the sauce simmer for 5–7 minutes until slightly thickened.
  5. Add chicken to sauce. Grill with regular basting or bake in the oven for 25–30 minutes until cooked through.
