2 pounds beef chuck roast, cut into chunks

2 tablespoons tomato paste
1 can (14.5 ounces) diced tomatoes
4 cups low-sodium beef broth
2 sprigs fresh rosemary
2 sprigs fresh thyme
1 1/2 teaspoons salt
1/2 teaspoon black pepper
Instructions
1. Heat olive oil in a large Dutch oven over medium-high heat.
2. Pat beef dry, season with salt and pepper, and sear until browned on all sides. Remove and set aside.
3. In the same pot, sauté onions, garlic, and celery until softened.
