Ingredients

450g ground pork

1 tablespoon brown sugar

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon dried sage

1/2 teaspoon dried thyme

1/4 teaspoon crushed red pepper flakes (optional)

1/2 teaspoon garlic powder

1/2 teaspoon paprika

Instructions

1. In a large bowl, combine ground pork, brown sugar, salt, black pepper, sage, thyme, crushed red pepper flakes, garlic powder, and paprika.

2. Mix thoroughly using your hands or a spatula until well incorporated.

3. Shape mixture into 2-inch wide patties.

4. (Optional) Refrigerate patties for 20–30 minutes to help them hold their shape.

5. Heat a skillet over medium heat and lightly oil if using lean meat.

6. Cook patties 3–4 minutes per side or until golden brown and cooked through.

7. Transfer to paper towels to drain excess grease.

8. Serve hot, or store once cooled.

Notes

You can freeze cooked patties for up to 2 months—reheat as needed for quick meals.

Add maple syrup or cayenne pepper to adjust sweetness or heat.
