Ingredients

1 tablespoon butter

1 small onion, chopped

2 garlic cloves, minced

2 cups milk

1 cup carrots, shredded

2 cups sharp cheddar cheese, shredded

0.5 teaspoon salt

0.25 teaspoon black pepper


Instructions

2. Sprinkle in flour and stir constantly for 1-2 minutes to form a roux.

5. Reduce heat, stir in heavy cream, then add cheddar cheese gradually until melted and smooth.

6. Season with salt and black pepper to taste.

Notes

For extra depth, mix sharp cheddar with mild cheddar or add a tablespoon of Parmesan.

Use fresh broccoli, but frozen works in a pinch—just adjust cooking time slightly.
