If you’re craving all the fiery, buttery flavor of buffalo wings but want something lighter and veggie-forward, these Buffalo Cauliflower Bites are the move. They’re crispy on the outside, tender on the inside, and absolutely perfect for dunking into a cool, creamy dip. I reach for this recipe whenever game day sneaks up on me or I need a crowd-pleasing appetizer fast.

The best part is that these bites feel indulgent but are secretly pretty wholesome. The cauliflower soaks up that classic buffalo heat, bakes up with beautiful caramelized edges, and turns into little flavor bombs you can eat by the handful. Whether you’re feeding vegetarians, wing lovers, or picky snackers, this tray disappears every single time at my house.
What Makes These Buffalo Cauliflower Bites So Good?
For me, the magic is all about balance. The cauliflower is hearty enough to stand in for wings, but light enough that you don’t feel weighed down after a few handfuls. A simple seasoned batter gives each floret a crisp shell, and that hot sauce–butter combo brings the familiar buffalo punch.
I also love how customizable these bites are. You can dial the spice up or down, swap in your favorite hot sauce, or pair them with ranch, blue cheese, or a herby yogurt dip. They’re just as happy on a snack board as they are next to a burger or tucked into a wrap the next day.
Ingredients for Buffalo Cauliflower Bites
Cauliflower
Cauliflower florets are the star of the show. They roast up tender with golden edges and give you that satisfying, “meaty” bite without any actual meat.
All-purpose flour
Flour creates the base of the batter, helping the seasonings cling to the cauliflower and giving every piece a light, crispy coating once baked.
Cornstarch
A little cornstarch in the batter boosts crunch factor. It keeps the coating light and crisp instead of heavy or bready.
Milk or buttermilk
Milk (or buttermilk if you have it) loosens the batter so it can evenly coat each floret. Buttermilk adds extra tang and tenderness.
Garlic powder
Garlic powder seasons the batter from the inside out, giving the bites that savory flavor that keeps you going back for more.
Onion powder
Onion powder adds depth and a subtle sweetness so the buffalo heat doesn’t feel one-dimensional.
Smoked paprika
Smoked paprika lends gentle smokiness and a gorgeous warm color that makes these bites look as bold as they taste.
Salt and black pepper
Salt and pepper sharpen all the other flavors and make the cauliflower taste rich and well-seasoned instead of bland.
Unsalted butter
Butter melts into the hot sauce and creates that classic buffalo glaze, with a velvety richness that clings to every nook of the cauliflower.
Buffalo hot sauce
Buffalo-style hot sauce is where the signature heat and tang come from. Choose your favorite brand—milder or spicier depending on your crowd.
Honey (optional)
A touch of honey softens the sharp heat and adds a hint of sweetness, which is especially nice if you’re serving spice-sensitive friends or kids.
Oil spray
A light mist of oil over the battered florets helps them brown beautifully and crisp up in the oven without deep-frying.
Fresh herbs and creamy dip
A quick ranch, blue cheese, or yogurt-based dip plus a sprinkle of fresh herbs like dill or chives cools the spice and makes every bite feel complete.
How To Make Buffalo Cauliflower Bites
Step 1: Prep the cauliflower
Preheat your oven and line a large baking sheet with parchment paper for easy cleanup. Cut the cauliflower into similar-sized florets so they cook evenly. Give them a quick rinse and pat them very dry—excess moisture can make the coating soggy.
Step 2: Mix the seasoned batter
In a mixing bowl, whisk together the flour, cornstarch, garlic powder, onion powder, smoked paprika, salt, and pepper. Pour in the milk and whisk until you have a smooth, pourable batter that will cling to the cauliflower without being too thick.
Step 3: Coat the florets
Add the cauliflower florets to the bowl and toss until each piece is coated in a thin layer of batter. Shake off any heavy excess so you don’t end up with gloopy puddles on the pan.
Step 4: Roast until crisp-tender
Spread the coated cauliflower out on the prepared baking sheet, leaving a little space between pieces. Mist lightly with oil spray. Roast until the coating is set, the edges are crisp, and the cauliflower is just tender when pierced with a fork.
Step 5: Make the buffalo sauce
While the cauliflower roasts, melt the butter in a small saucepan or microwave-safe bowl. Stir in the buffalo hot sauce and honey (if using) until smooth and glossy. Taste and adjust: add more hot sauce for extra heat or a bit more honey for sweetness.
Step 6: Toss in buffalo goodness
Transfer the hot cauliflower to a large bowl and pour the warm buffalo sauce over the top. Toss gently but thoroughly so every floret is coated in that fiery, buttery glaze.
Step 7: Finish with a quick broil
Spread the sauced cauliflower back onto the baking sheet and pop it under the broiler for a few minutes. This step caramelizes the sauce slightly and intensifies the flavor, giving you those irresistible charred spots.
Step 8: Plate with dip and herbs
Arrange the Buffalo Cauliflower Bites on a platter with your favorite creamy dip in the center. Scatter fresh herbs over the top and serve immediately while they’re hot and crisp.

How to Serve and Store Buffalo Cauliflower Bites
I like to serve these bites straight from the oven while they’re still sizzling, with a big bowl of ranch, blue cheese, or dill yogurt dip. A few sticks of celery and carrot on the side echo that classic winghouse setup and add extra crunch.
Leftovers keep surprisingly well. Let the cauliflower cool completely, then store it in an airtight container in the fridge for up to three days. To reheat, spread the bites on a baking sheet and warm them in a hot oven or air fryer until they’re heated through and the edges crisp back up. I don’t recommend microwaving—they’ll soften too much.

These bites fit right in with easy dinner ideas, fun snack boards, and quick appetizer recipes when you need simple food ideas fast.
Ingredients
1 large head cauliflower, cut into bite size florets
1/2 cup all purpose flour
1/4 cup cornstarch
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
2/3 cup milk or buttermilk
2 tablespoons unsalted butter, melted
1/2 cup buffalo style hot sauce
1 tablespoon honey, optional
Oil spray for the pan and tops
1/2 cup plain Greek yogurt
2 tablespoons mayonnaise
1 tablespoon lemon juice
1 tablespoon chopped fresh dill or chives
Pinch salt
Pinch black pepper
Instructions
1. Preheat the oven to 425°F (220°C). Line a large baking sheet with parchment paper and lightly mist it with oil spray.
2. Cut the cauliflower into small, even bite size florets. Rinse if needed, then pat very dry with a clean towel so the batter sticks well.
3. In a large bowl, whisk together the flour, cornstarch, garlic powder, onion powder, smoked paprika, salt, and black pepper.
4. Pour in the milk or buttermilk and whisk until you have a smooth, slightly thick batter that coats the back of a spoon.
5. Add the cauliflower florets to the bowl and toss until every piece is evenly coated in the seasoned batter, shaking off any heavy excess.
6. Arrange the coated florets in a single layer on the prepared baking sheet, leaving a little space between each one. Mist the tops lightly with oil spray.
7. Bake for 20 to 25 minutes, turning once halfway through, until the coating is set, lightly crisp, and the cauliflower is just tender when pierced with a fork.
8. While the cauliflower bakes, stir together the melted butter, buffalo style hot sauce, and honey in a small bowl until smooth and glossy. Taste and adjust the heat or sweetness to your liking.
9. In a separate bowl, whisk together the Greek yogurt, mayonnaise, lemon juice, fresh dill or chives, salt, and pepper to make a quick creamy dipping sauce. Chill until serving.
10. When the cauliflower is done, transfer the hot florets to a clean large bowl. Pour the warm buffalo sauce over the top and toss gently until every piece is coated.
11. Return the sauced cauliflower to the baking sheet and spread out again. Broil on high for 3 to 5 minutes, just until a few edges darken and the sauce looks slightly caramelized.
12. Serve the Buffalo Cauliflower Bites immediately with the chilled herb dip on the side and extra fresh herbs or cracked black pepper on top if you like.
Notes
For extra crispy bites, keep the florets on the smaller side and be sure the cauliflower is very dry before dipping it into the batter.
You can bake the battered cauliflower in an air fryer at 400°F (200°C) for 10 to 15 minutes, then toss in buffalo sauce and air fry a few more minutes to re crisp.
