Ingredients
12 lasagna noodles (oven-ready or regular, cooked)
3 cups shredded cooked chicken (rotisserie works great!)
1 cup buffalo sauce
1 cup ricotta cheese
1 egg
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 cup ranch or blue cheese dressing
2 cups shredded mozzarella cheese
1 cup shredded cheddar cheese
2 tablespoons chopped fresh parsley (optional, for garnish)
Instructions
- Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- Prepare the chicken mixture: In a bowl, toss the shredded chicken with buffalo sauce until evenly coated.
- Make the ricotta mixture: In a separate bowl, mix the ricotta cheese, egg, garlic powder, onion powder, salt, and pepper.
- Assemble the lasagna:
- Spread a thin layer of buffalo sauce on the bottom of the baking dish.
- Add a layer of lasagna noodles.
- Spread half of the ricotta mixture over the noodles.
- Add half of the buffalo chicken mixture.
- Drizzle with ranch or blue cheese dressing.
- Sprinkle with a layer of mozzarella and cheddar cheese.
- Repeat the layers once more, finishing with noodles, sauce, and a final layer of cheese.
- Bake the lasagna: Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 10-15 minutes until the cheese is bubbly and slightly golden.
- Let it rest: Remove from the oven and let it sit for 10 minutes before slicing.
