Ingredients

4 large artichokes

1 cup breadcrumbs (preferably seasoned)

1/2 cup grated Parmesan cheese

1/4 cup fresh parsley, finely chopped

3 cloves garlic, minced

1/2 cup unsalted butter, melted

1/4 cup olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1 lemon, cut into wedges (for serving)


Instructions

  1. Prepare the Artichokes: Trim the top inch of each artichoke, cut the stems for stability, and snip the pointed tips of the leaves. Rinse thoroughly under cold water.
  2. Steam the Artichokes: Place them in a large pot with 2 inches of water. Bring to a boil, then cover and simmer for 25-30 minutes until tender. Let cool slightly.
  3. Make the Stuffing: Combine breadcrumbs, Parmesan, parsley, and garlic in a bowl. Stir in melted butter and olive oil, then season with salt and pepper.
  4. Stuff the Artichokes: Gently spread the leaves and spoon the breadcrumb mixture between them. Press some stuffing into the center.
  5. Bake: Preheat the oven to 375°F (190°C). Place the artichokes in a baking dish, drizzle with olive oil, and cover with foil. Bake for 20 minutes, then remove the foil and bake for another 10 minutes until golden.
