Ingredients

1 lb chicken breast, diced

2 tbsp Cajun seasoning

2 tbsp olive oil

8 oz pasta twists (rotini or fusilli)

2 cups heavy cream

4 garlic cloves, minced

1 cup freshly grated Parmesan cheese

2 tbsp butter

2 tbsp fresh chopped parsley

1 tbsp fresh chopped basil

1/2 tsp salt

1/2 tsp black pepper


Instructions

1. Cut chicken into bite-sized pieces and toss with Cajun seasoning. Let it marinate for 10 minutes.

2. Heat olive oil in a skillet over medium-high heat. Sear chicken in batches until golden and cooked through. Set aside.

3. Cook pasta in salted boiling water until al dente. Reserve 1/2 cup pasta water and drain.

4. In the same skillet, melt butter and sauté garlic for 1 minute. Add heavy cream and bring to a simmer.

5. Stir in Parmesan cheese until melted and the sauce thickens. Season with salt, pepper, and herbs.

6. Add pasta and reserved water to the sauce. Mix well.

7. Return chicken to the pan and simmer for 2–3 minutes to combine flavors.

8. Serve hot, garnished with extra herbs and Parmesan.

Notes

Let the chicken rest before adding it back to the sauce for juicier bites.

Use freshly grated Parmesan—not pre-shredded—for the smoothest Alfredo texture.
