Ingredients
3 large Yukon gold potatoes, diced
12 oz smoked sausage, sliced
1 medium onion, chopped
3 cloves garlic, minced
3 tablespoons butter
3 tablespoons all-purpose flour
4 cups chicken broth
1 cup heavy cream
1 ½ cups shredded cheddar cheese
1 tablespoon Cajun seasoning
Salt, to taste
Chopped parsley (optional, for garnish)
Instructions
1. In a large pot or Dutch oven, cook sliced smoked sausage over medium heat until browned. Remove and set aside.
2. In the same pot, melt butter and sauté chopped onion until soft. Add minced garlic and stir until fragrant.
3. Sprinkle flour over the onions and garlic. Stir and cook for 1–2 minutes to form a golden roux.
4. Slowly pour in chicken broth while whisking. Add diced potatoes and bring to a boil.
