Ingredients

6 slices thick-cut bacon, chopped

1 medium onion, diced

2 cloves garlic, minced

4 cups russet potatoes, peeled and cubed

3 cups chicken broth

1 cup milk (whole or 2%)

1/2 cup heavy cream

1 tsp Cajun seasoning (more to taste)

Salt and freshly ground black pepper to taste

1/2 tsp smoked paprika

1 tbsp butter (optional)

2 green onions, chopped (for garnish)

Shredded cheddar cheese (optional garnish)


Instructions

  1. In a large pot, cook the bacon over medium heat until crispy (about 6-8 minutes). Remove and drain on paper towels.
  2. Leave 2 tablespoons of bacon fat in the pot. Add diced onion and cook until soft (about 4 minutes). Add garlic and cook for 1 minute.
  3. Add potatoes, broth, Cajun seasoning, and paprika. Bring to a boil, then reduce to a simmer. Cover and cook until potatoes are tender (about 15 minutes).
  4. Stir in milk, cream, and optional butter. Simmer uncovered for 5-7 more minutes.
  5. Season with salt and pepper. Stir in bacon or use it as garnish.
  6. Serve hot topped with green onions and cheese, if desired.
