3 pounds sweet potatoes
1/2 cup unsalted butter
1 cup brown sugar
1 teaspoon ground cinnamon
1 tablespoon vanilla extract
1/2 teaspoon salt
Instructions
1. Peel and slice the sweet potatoes into 1/2-inch rounds, keeping them uniform for even cooking.
2. In a saucepan over medium heat, melt the butter and stir in the brown sugar, cinnamon, vanilla, and salt until smooth and bubbling.
3. Arrange the sweet potato slices in a baking dish. Pour the glaze evenly over the top to coat all slices.
4. Cover the dish with foil and bake at 375°F (190°C) for 30 minutes.
