Ingredients
1 cup unsalted butter, melted
2 cups granulated sugar
4 large eggs
2 teaspoons vanilla extract
3/4 cup unsweetened cocoa powder
1 cup all-purpose flour
1/2 teaspoon salt
8 ounces cream cheese, softened
1/3 cup powdered sugar
1 1/2 cups white chocolate chips
4 candy canes, crushed
Instructions
1. Preheat the oven to 350°F and grease a mini muffin pan well.
2. In a large bowl, whisk together the melted butter and granulated sugar until glossy.
3. Add the eggs and vanilla extract, then whisk until smooth.
4. Stir in the cocoa powder, flour, and salt just until combined into a thick brownie batter.
5. In a separate bowl, beat the softened cream cheese with the powdered sugar until smooth and creamy.
6. Spoon about 1 tablespoon of brownie batter into each mini muffin cup.
7. Add about 1 teaspoon of cream cheese filling to the center of each cup.
8. Top with a little more brownie batter so the filling is mostly covered.
9. Bake for 14 to 16 minutes, until the tops are set but still soft in the center.
10. Cool in the pan for 10 minutes, then carefully remove and let cool completely on a rack.
11. Melt the white chocolate chips gently in the microwave in short bursts, stirring between each burst.
12. Spoon or drizzle the melted white chocolate over the cooled brownie bombs.
13. Immediately sprinkle with crushed candy canes.
14. Let the topping set before serving or chilling.
Notes
Use full-fat cream cheese for the smoothest and richest center.
Do not overbake or the brownie bombs will lose their fudgy texture.
