Ingredients
2 tablespoons butter
1 tablespoon olive oil
3 large yellow onions, thinly sliced
2 cloves garlic, minced
2 tablespoons brown sugar
3 tablespoons balsamic vinegar
1/2 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon fresh thyme leaves
Instructions
1. Melt the butter and olive oil in a large skillet over medium heat.
2. Add the sliced onions and salt, then stir well to coat the onions in the fat.
3. Reduce the heat to medium-low and cook the onions slowly for 30 to 35 minutes, stirring often, until soft, golden, and deeply caramelized.
4. Stir in the garlic, brown sugar, balsamic vinegar, black pepper, and thyme.
5. Continue cooking for 10 to 15 minutes, stirring every few minutes, until the mixture is thick, glossy, and jammy.
6. Remove from the heat and let the onion jam cool slightly.
7. Spoon into a clean jar or airtight container and refrigerate once fully cooled.
Notes
Do not rush the onions with high heat or they can burn before turning sweet and jammy.
The jam thickens more as it cools, so let it rest before deciding if it needs extra cooking time.
