Ingredients

2 tablespoons olive oil

1 medium onion, chopped

2 cloves garlic, minced

4 large carrots, peeled and chopped

3 medium Yukon gold potatoes, peeled and diced

4 cups vegetable broth

1 cup full-fat coconut milk

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons chopped fresh chives or parsley (for garnish)


Instructions

1. In a large pot, heat olive oil over medium heat.

2. Add chopped onion and sauté until translucent, about 3–4 minutes.

3. Stir in minced garlic and cook for 1–2 more minutes.

4. Add the chopped carrots and potatoes; stir well to coat with the oil.

5. Pour in the vegetable broth to cover the vegetables.

6. Bring to a boil, then reduce heat and simmer for 20–25 minutes until vegetables are fork-tender.

7. Use an immersion blender or standard blender to puree the soup until smooth.

8. Stir in the coconut milk and simmer for 5 more minutes.

9. Season with salt and black pepper to taste.

10. Garnish with herbs and a swirl of coconut milk before serving.

Notes

For extra depth, try roasting the carrots and potatoes before blending.
