1 cup grated coconut (plus more for topping)

Instructions
1. Preheat oven to 350°F (175°C). Grease and flour a bundt or tube pan.
2. In a large bowl, whisk together eggs, sugar, butter, and vanilla until smooth.
3. Add sweetened condensed milk and coconut milk to the bowl; stir well.
4. Mix in flour and baking powder until combined, then fold in grated coconut.
5. Pour batter into the prepared pan and bake for 40–50 minutes or until golden and set.
6. While baking, simmer sweetened condensed milk and coconut milk for glaze until thickened.
7. Let cake cool 10 minutes, then turn onto a serving plate.
