4 cups diced Yukon Gold or Russet potatoes
1 tablespoon unsalted butter
1 small yellow onion, finely chopped
3 cloves garlic, minced
3 cups chicken broth
1 cup whole milk or heavy cream
2 cups shredded sharp cheddar cheese
1 teaspoon fresh thyme leaves
1 tablespoon chopped parsley
1 teaspoon salt
½ teaspoon freshly cracked black pepper
Instructions
1. Melt butter in a large soup pot over medium heat. Add chopped onion and cook until softened, about 5 minutes.
2. Add minced garlic and cook for another minute until fragrant.
3. Stir in diced potatoes and pour in the chicken broth. Bring to a boil, then reduce to a simmer.
4. Cover and cook until potatoes are fork-tender, about 15–20 minutes.

6. Stir in milk or cream.
