Ingredients

1 lb ground beef (80/20 preferred)

1 egg

1/2 cup breadcrumbs

1/2 tsp garlic powder

1/2 tsp onion powder

1 tsp salt

1/2 tsp black pepper

1/2 cup BBQ sauce (plus extra for glaze)

1 cup sharp cheddar cheese, cubed

12 strips thick-cut bacon

Toothpicks or butcher’s twine (optional)


Instructions

  1. In a large bowl, combine ground beef, egg, breadcrumbs, garlic powder, onion powder, salt, pepper, and 1/2 cup BBQ sauce. Mix until just combined.
  2. Scoop about 2 tablespoons of the mixture and flatten it in your hand.
  3. Place a cheddar cube in the center and wrap the meat around it, sealing it completely.
  4. Wrap each meatball with a strip of bacon. Secure with a toothpick if needed.
  5. Preheat oven to 400°F (200°C) or prepare your grill for indirect heat.
  6. Place bombs on a wire rack over a foil-lined baking sheet.
  7. Bake or grill for 25–30 minutes until bacon is crispy and internal temperature reaches 160°F (71°C).
  8. Brush each bomb with additional BBQ sauce in the last 5–7 minutes of cooking.
