Ingredients

1/2 cup cream cheese (softened)

1/4 cup powdered sugar

1 teaspoon vanilla extract (divided)

2 1/4 cups all-purpose flour

1/2 teaspoon baking soda

1/2 teaspoon salt

3/4 cup unsalted butter (softened)

3/4 cup brown sugar

1/2 cup granulated sugar

1 large egg

1 egg yolk

1 cup chocolate chips (mix of mini and regular)


Instructions

1. In a bowl, beat cream cheese, powdered sugar, and 1/2 teaspoon vanilla extract until smooth. Scoop into teaspoon-sized portions, place on a lined tray, and freeze until firm.

2. In another bowl, whisk together flour, baking soda, and salt.

3. In a mixing bowl, cream together butter, brown sugar, and granulated sugar until fluffy.

4. Beat in the egg, egg yolk, and remaining vanilla extract.

5. Gradually mix in dry ingredients until dough forms. Fold in chocolate chips.

6. Take a tablespoon of dough, flatten it, and wrap it around a frozen cream cheese ball. Seal well and shape into a ball.

7. Chill the cookie dough balls for at least 30 minutes.

8. Preheat oven to 350°F. Line a baking sheet with parchment paper.

9. Bake cookies for 12–14 minutes until golden brown at the edges.

10. Let cool on the tray for 5 minutes before transferring to a wire rack.

Notes

Freeze the cheesecake centers until solid so they stay intact while baking.
