Description

Ingredients

9 ounces cheese tortellini

1 pound steak (ribeye or sirloin), cubed or thinly sliced

1 tablespoon olive oil

1 tablespoon butter

1 medium onion, thinly sliced

2 cloves garlic, minced

1 cup beef broth

1 cup heavy cream

1 1/2 cups shredded provolone cheese

1/2 teaspoon salt

1/2 teaspoon cracked black pepper

1 tablespoon chopped fresh parsley (optional)


Instructions

1. Bring a pot of salted water to a boil and cook the tortellini according to package instructions. Drain and set aside.

2. Heat a large skillet over medium-high heat with olive oil. Season steak with salt and pepper, then sear until browned and just cooked. Remove and set aside.

3. Lower heat to medium. Melt butter in the same skillet and add sliced onions. Sauté until golden and soft, about 8–10 minutes.

4. Add minced garlic and sauté for another minute until fragrant.

5. Pour in beef broth and heavy cream, stirring to combine. Simmer for 2–3 minutes.

6. Gradually stir in shredded provolone until the sauce is melted and smooth.

7. Return steak and cooked tortellini to the skillet. Stir to coat in sauce and simmer 2–3 minutes.

8. Taste and adjust seasoning.

9. Garnish with chopped parsley and extra cracked pepper.

10. Serve hot and enjoy!

Notes

For extra flavor, add a splash of Worcestershire sauce to the steak while searing.

You can swap provolone for mozzarella or gouda for a different flavor profile.
