Description

This Cheesesteak Tortellini in Rich Provolone Sauce is the perfect fusion of Philly cheesesteak flavors and creamy pasta comfort. Savory ground beef, cheese-filled tortellini, and a luscious provolone sauce come together for a rich and indulgent meal that’s easy to make in under 30 minutes.

Ingredients

12 oz cheese tortellini

1 lb ground beef

1 small onion, finely chopped

2 cloves garlic, minced

2 tbsp butter

1 tbsp all-purpose flour

1 cup beef broth

1 cup heavy cream

1 ½ cups shredded provolone cheese

½ tsp salt (adjust to taste)

½ tsp black pepper

1 tbsp fresh parsley (optional, for garnish)

Instructions

  1. Bring a large pot of salted water to a boil and cook tortellini according to package instructions. Drain and set aside, reserving ½ cup of pasta water.
  2. In a large skillet over medium heat, cook ground beef until browned, breaking it apart as it cooks. Drain excess grease and transfer the beef to a plate.
  3. In the same skillet, melt butter and sauté onions and garlic until soft and fragrant, about 2-3 minutes.
  4. Sprinkle in flour and stir constantly for 1 minute. Slowly whisk in beef broth and heavy cream, letting the sauce thicken.
  5. Reduce heat to low, then stir in shredded provolone until fully melted and smooth.
  6. Add cooked beef back to the skillet and stir to combine. Toss in the drained tortellini and mix until coated. If needed, add reserved pasta water to adjust sauce consistency.
  7. Garnish with fresh parsley and serve hot. Enjoy!
