Ingredients
1 lb boneless skinless chicken thighs or breasts
8 oz linguine pasta
3 tablespoons unsalted butter
2 tablespoons olive oil
4 cloves garlic, minced
1 cup heavy cream
1 cup freshly grated Parmesan cheese
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons chopped fresh parsley (optional)
Instructions
1. Pat the chicken dry and season with salt and black pepper.
2. Heat olive oil and 1 tablespoon butter in a skillet over medium-high heat. Sear chicken on both sides until golden and cooked through. Remove and set aside.
3. In a large pot, cook linguine in salted water until al dente. Reserve 1/2 cup pasta water and drain.
4. In the same skillet, melt the remaining butter. Add garlic and cook until fragrant, about 1 minute.
5. Pour in heavy cream and let it simmer gently for 2–3 minutes.
6. Stir in Parmesan cheese and mix until sauce is smooth. Add pasta water if needed to adjust thickness.
7. Add cooked linguine and toss to coat.
8. Slice the chicken and serve over the pasta.
9. Garnish with fresh parsley and additional Parmesan if desired.
