Ingredients
1 lb ground beef
1 cup long grain white rice, cooked
1 can (15 oz) black beans, drained and rinsed
1 can (10 oz) diced tomatoes with green chilies
1/2 cup tomato sauce
1/2 cup frozen corn (optional)
1 packet taco seasoning
1/2 cup diced onions
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1/4 cup chopped fresh cilantro (for garnish)
Salt and pepper to taste
Olive oil for cooking
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a skillet, add onions and cook until soft.
- Add ground beef, cook until browned, and drain excess grease.
- Stir in taco seasoning, tomato sauce, and diced tomatoes. Simmer for 5–7 minutes.
- Add cooked rice, black beans, and corn. Mix well and season with salt and pepper.
- Spread mixture into a greased 9×13 baking dish.
