Ingredients

1 lb ground beef

1 cup long grain white rice, cooked

1 can (15 oz) black beans, drained and rinsed

1 can (10 oz) diced tomatoes with green chilies

1/2 cup tomato sauce

1/2 cup frozen corn (optional)

1 packet taco seasoning

1/2 cup diced onions

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1/4 cup chopped fresh cilantro (for garnish)

Salt and pepper to taste

Olive oil for cooking


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a skillet, add onions and cook until soft.
  3. Add ground beef, cook until browned, and drain excess grease.
  4. Stir in taco seasoning, tomato sauce, and diced tomatoes. Simmer for 5–7 minutes.
  5. Add cooked rice, black beans, and corn. Mix well and season with salt and pepper.
  6. Spread mixture into a greased 9×13 baking dish.
  7. Sprinkle cheddar and Monterey Jack cheese evenly over the top.
  8. Bake uncovered for 15–20 minutes, until cheese is melted and bubbly.
  9. Garnish with chopped cilantro and serve hot.
