Ingredients

2 chicken breasts

1 tablespoon Cajun seasoning

1 tablespoon olive oil

8 ounces penne pasta

1 cup heavy cream

3 garlic cloves, minced

1 cup Parmesan cheese, grated

2 tablespoons butter

2 tablespoons fresh parsley, chopped

Instructions

1. Slice chicken breasts thinly and place in a bowl. Drizzle with olive oil and coat with Cajun seasoning. Let marinate for 30 minutes.

2. Grill chicken on medium-high heat for 4-5 minutes per side until fully cooked. Set aside.

3. Cook penne in salted boiling water until al dente. Drain and set aside.

4. In a skillet, melt butter over medium heat. Add garlic and sauté until fragrant.

5. Stir in heavy cream and bring to a simmer. Gradually whisk in Parmesan until smooth.

6. Add cooked penne to the sauce and toss to coat evenly. Let simmer to thicken.

7. Plate pasta and top with grilled Cajun chicken. Garnish with parsley and serve hot.

Notes

Grill marks on the chicken make the presentation stunning—don’t skip the sear.

Add a dash of red pepper flakes to the sauce for extra heat if desired.
