Ingredients
16 oz Velveeta cheese, cubed
1 cup shredded cheddar cheese
1 can (10 oz) Rotel tomatoes with green chilies, lightly drained
½ cup whole milk or heavy cream
1 packet (1 oz) ranch seasoning mix
½ teaspoon garlic powder
½ teaspoon onion powder
Optional: ½ lb cooked ground beef, chorizo, or sausage
Optional: ½ teaspoon smoked paprika
Optional: 1 jalapeño, diced
Optional: ¼ cup chopped fresh cilantro
Instructions
- Prepare Ingredients – Grate the cheddar cheese, lightly drain the Rotel tomatoes, and cook any meat if adding.
- Melt Cheese – In a saucepan or slow cooker, add Velveeta and cheddar cheese with milk or cream. Heat on low, stirring occasionally, until melted.
- Add Seasoning – Stir in Rotel tomatoes, ranch seasoning, garlic powder, and onion powder. Mix well.
- Simmer – Cook for 5-7 minutes until smooth, stirring occasionally. If too thick, add a splash of milk.
- Serve – Transfer to a serving dish or keep warm in a slow cooker. Garnish with cilantro or jalapeños. Enjoy with tortilla chips or your favorite dippers!
