Cheesy Spinach Stuffed Shells is a comforting Italian-inspired dish made with jumbo pasta shells filled with creamy ricotta, mozzarella, and spinach, all baked in a rich marinara sauce. It’s a delicious vegetarian meal perfect for family dinners, meal prep, or special occasions.
Ingredients
20 jumbo pasta shells
1 (15 oz) container ricotta cheese
1 1/2 cups shredded mozzarella cheese, divided
1/2 cup grated Parmesan cheese
2 cups fresh spinach, chopped (or 1 cup frozen, thawed and drained)
1 large egg
2 cloves garlic, minced
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
2 cups marinara sauce
2 tablespoons fresh parsley or basil, chopped (for garnish)
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the jumbo pasta shells in salted water until al dente, according to package instructions. Drain and rinse with cold water.
- In a large bowl, mix together ricotta, 1 cup mozzarella, Parmesan, spinach, egg, garlic, Italian seasoning, salt, and pepper until well combined.
- Spread 1 cup of marinara sauce evenly on the bottom of a 9×13-inch baking dish.
- Fill each pasta shell with 2-3 tablespoons of the ricotta mixture and place them in the baking dish.
- Pour the remaining 1 cup of marinara sauce over the shells and sprinkle with the remaining 1/2 cup mozzarella cheese.
- Cover with aluminum foil and bake for 25 minutes.
- Remove the foil and bake for another 10 minutes, or until the cheese is melted and bubbly.
- Let rest for 5 minutes, then garnish with chopped parsley or basil before serving.
