Ingredients

1 lb ground beef

1 packet taco seasoning

¼ cup water

1 cup shredded cheddar cheese (plus extra for topping)

1 cup biscuit or pancake mix (like Bisquick)

½ cup milk

1 large egg

¼ cup sour cream (optional)

Chopped parsley or green onions, for garnish

Muffin liners or non-stick spray


Instructions

  1. Brown the ground beef in a skillet, drain excess fat. Add taco seasoning and water. Simmer 5 minutes.
  2. Mix biscuit mix, milk, and egg in a bowl to make the batter.
  3. Preheat oven to 375°F and prepare muffin tin with liners or spray.
  4. Add 1 tbsp batter into each cup. Top with taco meat and cheddar. Add another small scoop of batter.
  5. Bake for 18–20 minutes until golden and bubbly.
  6. Cool slightly, then top with sour cream, extra cheese, and fresh herbs.
