Ingredients

1 small onion, chopped
2 cloves garlic, minced
1 pound ground beef
2 tablespoons taco seasoning
1 cup canned diced tomatoes with green chilies
1 cup canned black beans, drained and rinsed
1 cup canned corn, drained
2 cups cooked rice
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1 avocado, sliced (optional)
2 tablespoons fresh cilantro, chopped (optional)
Instructions
1. Heat olive oil in a large skillet over medium heat. Add chopped onion and garlic; sauté until softened.
2. Add ground beef and cook until browned, breaking it up with a spatula. Drain excess fat.
3. Stir in taco seasoning, diced tomatoes with green chilies, black beans, and corn. Simmer for 5 minutes.
4. Fold in the cooked rice and stir well. Cook for 2-3 more minutes to heat through.
5. Sprinkle cheddar and Monterey Jack cheese evenly on top. Cover and let cheese melt for 2-3 minutes.
