Ingredients

For the Crust:

2 cups chocolate cookie crumbs

6 tbsp unsalted butter, melted

For the Cheesecake Filling:

8 oz dark chocolate, melted

16 oz (2 blocks) cream cheese, softened

3/4 cup granulated sugar

2 eggs

1/2 cup heavy cream

1 tsp vanilla extract

2 tbsp cocoa powder

For the Cherry Topping:

2 cups fresh or frozen cherries

1/3 cup granulated sugar

1 tbsp cornstarch

1 tbsp lemon juice


Instructions

  1. Prepare the Crust: Mix chocolate cookie crumbs with melted butter. Press firmly into the bottom of a springform pan and chill.
  2. Melt the Chocolate: Gently melt the dark chocolate using a double boiler or microwave. Let it cool slightly.
  3. Make the Cheesecake Filling: Beat cream cheese and sugar until smooth. Add eggs one at a time, mixing after each. Stir in melted chocolate, heavy cream, vanilla, and cocoa powder until combined.
  4. Bake the Cheesecake: Pour filling over crust and smooth the top. Place in a water bath and bake at 325°F (163°C) for 50–60 minutes, until the center is slightly jiggly.
  5. Cool and Chill: Let the cheesecake cool in the oven for an hour, then refrigerate for at least 4 hours or overnight.
  6. Prepare the Cherry Topping: In a saucepan, cook cherries, sugar, cornstarch, and lemon juice over medium heat until thick and glossy. Cool before spreading on the cheesecake.
  7. Serve: Carefully remove the cheesecake from the pan, slice, and enjoy!
