Ingredients

12 oz fettuccine pasta

2 boneless skinless chicken breasts

1 tablespoon olive oil

2 tablespoons butter

3 cloves garlic minced

1 ½ cups heavy cream

1 cup freshly grated parmesan cheese

½ teaspoon salt

½ teaspoon black pepper

1 tablespoon chopped parsley (optional)


Instructions

1. Bring a large pot of salted water to a boil. Cook the fettuccine until al dente. Drain and set aside, reserving 1/2 cup pasta water.

2. Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat and sear chicken 5–7 minutes per side. Remove and slice.

3. In the same skillet, melt butter over medium heat. Add minced garlic and sauté for 30 seconds until fragrant.

4. Pour in heavy cream and bring to a simmer. Stir in parmesan cheese until melted and sauce is smooth.

5. Add fettuccine to the sauce and toss to coat. Add a splash of pasta water if needed to thin the sauce.

6. Return sliced chicken to the pan or serve on top. Garnish with parsley and extra black pepper if desired.

Notes

Use freshly grated parmesan for the best texture and flavor.

To reheat leftovers, warm gently on stovetop with a splash of cream or milk.
