Ingredients

1 tablespoon butter

1 tablespoon olive oil

1 cup chopped yellow onion

1 cup diced carrots

1 cup diced celery

3 cloves garlic, minced

1 pound chicken breast, cubed

4 cups chicken broth

1 teaspoon Italian seasoning

1 teaspoon salt

½ teaspoon black pepper

1 pound potato gnocchi

2 cups baby spinach

1 cup heavy cream


Instructions

1. In a large pot, heat butter and olive oil over medium heat.

2. Add onion, carrots, and celery. Cook for 5–7 minutes until soft and translucent.

3. Stir in minced garlic and cook for 30 seconds until fragrant.

4. Add cubed chicken breast, season with salt, pepper, and Italian seasoning. Cook 5–6 minutes until browned.

5. Pour in chicken broth. Simmer for 10 minutes until chicken is fully cooked.

6. Add gnocchi and cook 3–4 minutes until they float and soften.

7. Reduce heat and stir in heavy cream. Do not boil.

8. Add baby spinach and stir until wilted.

9. Taste and adjust seasonings. Serve hot with black pepper and optional Parmesan.

Notes

Use rotisserie chicken for a quicker version.
