2 tablespoons olive oil
1 pound boneless, skinless chicken breasts, cubed
Salt and black pepper to taste
1/2 teaspoon garlic powder
1 tablespoon butter
8 oz mushrooms, sliced
2 cloves garlic, minced
3/4 cup Marsala wine
1 cup heavy cream
1/2 teaspoon dried thyme
1/2 teaspoon onion powder
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1 can refrigerated biscuit dough (cut into quarters)
Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a skillet over medium-high heat. Season cubed chicken with salt, pepper, and garlic powder. Sear until golden and cooked through. Remove from skillet.
- In the same pan, melt butter and sauté mushrooms until browned. Add minced garlic and cook until fragrant.
- Pour in Marsala wine, scraping the pan. Let simmer 2–3 minutes.
- Add heavy cream, thyme, and onion powder. Stir and simmer until sauce thickens slightly.
- Return chicken to the skillet and coat with the sauce.
- Pour mixture into a greased 9×13-inch baking dish.
- Evenly scatter biscuit pieces over the top.
- Sprinkle mozzarella and Parmesan cheese on top.
