Ingredients

4 boneless, skinless chicken breasts

2 tablespoons olive oil

1 small yellow onion, finely chopped

3 garlic cloves, minced

1 can (28 oz) crushed tomatoes

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon red pepper flakes (optional)

1 teaspoon dried oregano

1/2 cup fresh basil leaves, chopped (plus more for garnish)

12 oz spaghetti or pasta of choice, cooked al dente

Freshly grated Parmesan (optional, for serving)


Instructions

  1. Pat chicken breasts dry and season both sides with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear chicken for 4–5 minutes per side until golden and cooked through. Remove and set aside.
  3. In the same skillet, add chopped onion and cook until soft (3–4 mins). Stir in garlic and cook another 30 seconds.
  4. Add crushed tomatoes, oregano, red pepper flakes, salt, and pepper. Simmer for 10–12 minutes until slightly thickened.
  5. Return chicken to the skillet and spoon sauce over the top. Simmer 5–7 more minutes.
  6. Stir in chopped basil, plate over pasta, and garnish with more basil and Parmesan if desired.
