Ingredients
2 chicken breast cutlets
1 tablespoon olive oil
2 tablespoons butter (divided)
4 cloves garlic (minced)
1 tablespoon lemon juice
1 teaspoon lemon zest
1 cup chicken broth (divided)
1 cup white rice
1 cup milk
1/3 cup heavy cream
1/2 cup grated parmesan cheese
1/2 teaspoon crushed red pepper flakes
2 tablespoons chopped fresh parsley
Salt and pepper (to taste)
1 tablespoon all-purpose flour (for dredging)
Instructions
1. Season chicken cutlets with salt, pepper, and lightly dredge in flour.
2. Heat olive oil and 1 tablespoon butter in a skillet over medium heat. Sear chicken on both sides until golden and cooked through. Set aside.
3. In the same skillet, melt remaining butter. Add minced garlic and cook until fragrant.
4. Deglaze pan with 1/4 cup chicken broth and lemon juice. Simmer with lemon zest and red pepper flakes.

6. Add remaining chicken broth and milk. Simmer covered until rice is tender.
