Ingredients

1 lb flank steak, thinly sliced

3 cups broccoli florets

3 tablespoons soy sauce

2 tablespoons oyster sauce

3 garlic cloves, minced

1 teaspoon fresh ginger, grated

1 tablespoon cornstarch

1 tablespoon brown sugar

1 teaspoon sesame oil

2 tablespoons vegetable oil

2 tablespoons water


Instructions

1. Slice the beef thinly against the grain. Toss with 1 tablespoon soy sauce, cornstarch, and sesame oil. Let marinate 15 minutes.

2. Bring a pot of water to boil. Blanch broccoli for 2 minutes. Drain and set aside.

3. Heat 1 tablespoon vegetable oil in a wok or skillet over high heat. Stir-fry beef until just browned. Remove and set aside.

4. Add remaining oil, garlic, and ginger to pan. Stir-fry until fragrant.

5. Add remaining soy sauce, oyster sauce, brown sugar, and water. Stir until smooth.

6. Return beef and broccoli to pan. Toss everything to coat in sauce and heat through.

7. Serve hot over rice or noodles.

Notes

Slice the beef very thinly for best texture and quickest cooking.

Blanching the broccoli keeps it vibrant green and perfectly tender-crisp.
